The sliced green tomatoes are then dipped in buttermilk and again in a batter made of cornmeal, rolled on breadcrumbs and then deep fried. The preparation somewhat resembles that of cutlets or patties, and can sometimes use egg wash and flour instead of breadcrumbs and cornmeal respectively. The batter may be flavored as desired; however, salt and pepper are a must.
