Eggplant Parmesan refers to the delicious baked Italian dish where the eggplany is sliced into round or bite sized pieces and is fried after dipping into a egg mixture and coated with crumbs. The eggplant is then cooked in a rich tomato sauce and topped with cheese. The dish is served as the main dish and is both delicious and filling. Served with pasta or bread the dish can also have a variety of other vegetables like green peppers and onions to add to its taste and flavor. It is also referred to as Parmigiana.
