Eggplant Appetizer

Eggplant appetizer or Caponatina, is a traditional Sicilian dish, often served as an appetizer or even a quick meal during summer season. Once cooked, the eggplant appetizer can be used for upto 2 weeks but needs to be refrigerated. Basic ingredients for eggplant appetizer are eggplants, olive oil, onions, tomato sauce, celery, green and black olives, wine vinegar, sugar and pepper. Eggplant appetizer can be served with a bread, fresh vegetables and assorted cheeses.
