Egg Sauce

 

Egg sauce which is made with egg, butter, flour and seasonings is served as an accompaniment to other foods like patties or as a thick base for foods like meat and vegetable dishes or pastas. The egg sauce recipe is a simple one and has several variations.

 

Egg Sauce Recipe Overview

Here is an overview of the basic recipe for this sauce-

Ingredients: Eggs, the primary ingredient, are hard boiled, peeled and crumbled to be added in the sauce. Other ingredients include butter, flour, milk and seasonings. Seasonings may include salt, pepper, parsley, basil, pepper, lime juice, etc.

Method of Preparation: To prepare the sauce, the eggs are first placed in a pot and covered with enough water, and then heated till the water boils and they simmer for some time. The hard boiled eggs so obtained are peeled and crumbled. Butter is heated, followed by addition of flour, salt and pepper. The flour is cooked in it, and milk is added gradually, followed by the addition of chopped or crumbled eggs or seasonings. The sauce thus prepared is ready to serve.

The sauce can be served as an accompaniment to patties, or can be poured over cooked meats, vegetables or fish to add to the taste and texture of the dish. It can also be used as a sauce for pastas or a dressing for salads.

 

Egg Sauce Recipe Variations

The recipe for the sauce can be experimented with in many ways to introduce new tastes and flavors. This is mostly done by altering the type of seasoning ingredients used. Here is an example of an Italian pasta sauce recipe that is quite different from the basic recipe for the sauce.

Ingredients: Ingredients required for the egg pasta sauce are eggs, marjoram, basil, pickled capers, tomatoes, grated Parmigiano, pine nuts, olive oil, salt and pepper.

Method of Preparation: To prepare the sauce, water is heated to boiling point and eggs are cooked in it. The hard cooked eggs are cooled under running cold water and peeled. They are blended with basil, marjoram, olive oil, salt, pepper and grated cheese to obtain a creamy mixture. Tomatoes which are cut into thin wedges and toasted pine nuts and capers are mixed into this to make delicious pasta egg sauce. The salted and cooked pasta is seasoned with the sauce and thus ready to serve.

Egg sauce is a nutritious sauce, and an excellent source of high quality protein and essential amino acids are present in it on account of the eggs used. Eggs are beneficial for proper functioning of the heart, brain, nervous system and eyes. Seasonings contained in the sauce are known to stimulate digestion, and butter is a rich source of calcium which is essential for bone and dental health. The sauce is, however, a rich source of calories which may lead to undesired weight gain. The exact calorie count of the egg sauce may vary as per individual recipe.
