Dukes Mayonnaise

The Duke’s Mayonnaise is a commercial product, popular in Southeastern United States. It is widely used in the Southern cooking and is often used to make sandwiches, salads, and coleslaw. This Mayonnaise tastes less sweeter than the regular mayonnaise as it contains no sugar. It has a soft creamy consistency. It is often preferred by the Southern cooks for its traditional taste. Some of the popular recipes made with the Duke’s Mayonnaise are the tuna salad, chicken salad, potato salad, tomato sandwich, coleslaw, broccoli casserole, and mock hollandaise sauce

History

The Duke’s Mayonnaise was originally created by Mrs. Eugenia Duke in 1917. It was first created in Greenville, South Carolina. In 1929, this was then bought by C. F. Sauer Company, who is producing and marketing the product to date. It is claimed that the company has not altered the original recipe for its production and still uses the same method created by Mrs. Eugenia Duke.

Culinary Uses

The Duke’s Mayonnaise is used as a sandwich spread or as a dip for chips or French fries. It is used to make salad dressing. It is also used as a base to make other sauces.

Storing Tips

Unopened jars of Duke’s Mayonnaise can be stored at room temperature. However, once the jar is opened, it should be refrigerated to protect the flavor. Being exposed to high temperature will result in loss of flavor, and being exposed to freezing temperature may change the texture, consistency, and thickness.
