Duck Gumbo

Duck gumbo is a unique dish to serve the wild bird. It is delightful and rich in flavor. This cut of meat is very tender yet non-greasy. Several spices are used to make this gumbo. The ingredients that are used for making the recipe include wild ducks, all-purpose flour, sliced celery, cooking oil, chopped onion, smoked sausage, green pepper, minced garlic, fresh parsley, can stewed tomatoes, cooked rice, bay leaves, cayenne pepper, Worcestershire sauce, dried thyme, salt and pepper.
