Drop soup is a Chinese appetizer. Egg drop soup is a common example of a drop soup that is made of wispy beaten eggs in a bowl of boiled chicken broth. It is popularly known as egg flower soup. White pepper or black pepper, tofu and scallions are condiments that are usually added to the soup. When the soup is in its final stage of cooking, a stream of beaten eggs is added on the top of the boiling broth which seems like silken strands that are floating on the top. Different recipes of the soup are adopted in different countries.
