The curry traditionally belongs to the Asian and South Asian cuisine. Turmeric, cumin and red pepper flakes are the main distinguishing spices popularly used in curries. Apart from these ginger, garlic, bay leaf, curry leaves, basil, mustard etcetera are the other popular spices used in various combination in the preparation of curries. The word curry originated from the Dravidian word ‘kari’. Most curries from India have a high turmeric content making them yellow in color, whereas curried from Thailand are popularly distinguished on the basis of the their color with the yellow, green and red curries being the most popular. Curries and their recipe differ from cuisine to cuisine and even from region and family to family in Asia.More Less
