Curd Rice is an Indian rice dish, especially popular in the southern parts of the country, where it is also called as Thairu (curd or yourghurt) sadam (rice) or yoghurt rice. Specially served as a rice dish to beat the scorching summer heat, the very basic curd rice simply takes in the combination of boiled rice and milk. Also, there are other elaborate preparation methods, where rice is combined with a mixture of yoghurt, salt and milk, which is seasoned with green chilles, ginger and curry leaves and garnished with spices. Some even grace the rice with nuts and green grapes. Once cooked, curd rice may be chilled, if desired and is best served with spicy pickles.
