Cranberry cookie is made with cranberry essence or freshly chopped cranberries. Cranberry cookies are not too sweet and baking them is also a good way to use up the left over cranberries from thanksgiving. The cookies when baked with fresh cranberries have a light flavor and a tart like taste. Cranberry cookies use flour, eggs, white and brown sugar, shortening and nuts (optional). Some vanilla extract can also be added to the cookie batter to create a light flavor in the cookies. Cranberry cookies can be served with milk or tea.
