Country Style Ribs are a cut of pork meat taken from the blade region of the lion, near the pork shoulder. Technically speaking, though the name of the cut includes the term “ribsâ€, it does not include any rib bones. Also known as blade end country spare ribs or simply country ribs, they consist of fatty meat which when cooked turns out to be tender and succulent with delicious flavoring. Though not very easy to eat with fingers owing to the fatty texture, these ribs are highly coveted for their extremely good taste.
Cooking Country Style Ribs
Country Style Ribs are best cooked by barbecuing. They are prepared by slow barbecuing by the indirect grilling, or are grilled directly over a low heat fire, till they attain the desired tenderness and texture. Usually an internal temperature of 165 F is considered ideal enough for yielding meat of good tenderness, but the meat can be cooked further for further softness. However, an internal temperature of 180F -190F will make the meat excessively soft and fall apart.
