Corn tortilla, also known as tortilla de maize in Spanish, is a kind of a pancake made from cornflour dough. In the basic corn tortilla recipe, cornflour dough is kneaded with boiling water from which portions are pinched off and balls made. The balls are flattened on a plastic sandwich bag into round discs and fried on a pan or a non-stick grilled by tossing from side to side. Corn tortillas are a main course for the Mexican. Enchiladas, tacos, tostadas and flautas are made with the corn tortilla.
