Corn Sabji

 

Corn sabji is a North Indian curry made with fresh corn. It is made in a dry form or with a moderately spiced tomato gravy. It has the natural sweet flavor of corn along with the mild flavor of Indian spices.

 

 

Ingredients and Preparation

 

Corn is the main ingredient for making corn sabji. Onion, tomato, ginger and garlic are used for the gravy and also to enhance the flavor. Indian spices like cumin, turmeric, red chilli powder and coriander seed powder are used.

Corn sabji is made either in a pressure cooker or kadhai. Little oil is taken in the vessel and all the spices, onion and tomato are added. Corn is added and pressure cooked for a short time.

 

 

Serving

 

·         Corn sabji is served with Indian breads like roti or chapatti.

·         It can also be served with rice.
