Cinnamon dough is made by adding powdered cinnamon to  flour dough to make cinnamon rolls, buns and fritters. The dough is very similar to bread dough but additional flavoring agents like cinnamon, and spices like ginger are added to the dough.

 

How to make Cinnamon Dough?

Cinnamon dough is made by heating milk, butter, sugar and salt till just warm. Flour, powdered cinnamon and leavening agents may be sieved together to make a fine homogenous mix. The milk mixture is combined with flour and yeast to make soft sticky dough. The eggs are added and the dough is kneaded to increase gluten formation.. The dough is allowed to rise till double in size. The dough is punched down and then allowed to rise again.  The dough is then shaped into buns, rolls and loaves and then baked.

Sticky Cinnamon Dough Buns are made by making a dough from eggs, sugar, milk, yeast, flour, and salt. The dough is allowed to rise twice and then rolled out. Brown sugar and cinnamon is sprinkled on the dough and it is then rolled up to make a Swiss roll. The roll is then sliced and turned upside down on a baking tray covered with a sticky layer made by simmering cinnamon, brown sugar, white sugar, light raisins, butter and cream. The dough is allowed to rise again and baked till done.

Roxakia or Greek Cocoa Cinnamon Dough Cookies - Olive oil, flour, milk, eggs, sugar, salt and yeast are combined to make cinnamon based dough. The dough is then rolled out into discs with a depression in the center and allowed to rise. The depression is filled with crushed walnuts, cocoa powder, sugar, powdered cloves and cinnamon and baked. These baked cookies are then covered with a syrup made from sugar, water and lemon peel.

Cinnamon dough fritters is made by combining sugar, salt, eggs, flour, milk, yeast, apple sauce and powdered cinnamon. Pieces of the dough are rolled out or broken off and deep fried. The fritter is then dunked into sugar syrup and dusted with icing sugar before serving.
