Christmas goose is roasted goose that is favorably eaten during Christmas. It is also eaten on St. Martin’s Day too. The Christmas goose may be typically stuffed with prunes, apples, onions and sweet chestnuts. Salt and pepper, marjoram or mugwort are some of the the typical seasonings. The goose is usually garnished with red cabbage, gravy and Klobe. Alsatian-style is a popular version which is stuffed with Bratwurst and garnished with sauerkraut. The ingredients used for making Christmas goose include fresh whole goose, kosher salt, fresh rosemary, fresh thyme, butcher’s twine, kosher salt, goose rub, carrot, leek, rib celery, onion, water and bay leaf.
