Chorizo Sausage

Chorizo Sausage, also spelt as chourizo, is a Spanish term used to refer to types of pork sausages specially made in the Latin American countries. These sausages are made from a mixture of chopped pork meat, pork fat, salt, cinnamon, whole pepper grains, achiote and certain other spices that give it a nice red color. The sausage can be sold as both fresh, which needs to be cooked before eating and fermented smoked and cured, which can be eaten as it is. Chorizo sausages can be sliced and eaten with a sandwich, they can be fried, barbecued, simmered in any strong alcoholic beverage or even apple cider. The chorizo sausage recipes of various cuisines vary in terms of the ingredients that go into spicing up the sausages. The Spanish and Portuguese chorizos are usually a deep red in color because of the dried roasted red peppers used in the sausages. However, chili peppers are used in the Mexican version of the Chorizo Sausage.
