Chicken Fricassee

Chicken Fricassee is a classic French dish consisting of chicken in a creamy white wine or mushroom cream sauce. For Chicken Fricassee, a whole chicken is cut into eight pieces. The sauce may be made from butter, flour, cream, chicken broth, mushrooms or white wine, and different spices and herbs. Olives, parsley and nutmeg may be added just before serving. The Chicken Fricassee is usually served with rice or noodles.
