Chicken Egg Noodle consists of juicy stir-fried chicken strips and scrambled eggs tossed together with egg noodles to form a typical main dish characteristic of Chinese Cuisine. Noodles have always been central to traditional Chinese meals and egg noodles have been an eternal favourite with a vast number of recipe variations available. Apart from the scrambled form, egg can be combined with chicken in the boiled form also.
Chinese egg noodles are essentially noodles made from wheat flour that are prepared with eggs, in order to augment a rich flavor, texture, and color to them. Many Chinese noodle dishes such as Chicken egg noodles call for egg noodles specifically to bring out the authentic taste, flavour and texture of elements.
Major ingredients include thin egg noodles, chicken breast fillets (cut into thin strips), scrambled eggs, oyster sauce, soy sauce, sweet chilli sauce, chicken stock or water, cornflour, Chinese five-spice powder, vegetable oil, thinly sliced red and yellow capsicum, sliced shallots or spring onions, crushed garlic cloves, grated ginger, snow peas, shiitake mushrooms and roasted sesame seeds.
The oyster, soy and sweet chilli sauces are combined in a bowl along with the stock and a bit of cornflour. After thoroughly mixing, this blend is set aside.
Egg noodles are soaked in boiling water for about 10 minutes till ‘al dante’. Meanwhile, a combination of the five-spice powder and remaining cornflour is made and the chicken tossed to coat with it. In oil heated in a wok over high flame, the chicken strips are added and fried until golden. These are drained on paper towel.
In a wok, garlic and ginger are stir-fried followed by the shallots, capsicum strips, snow peas and mushrooms. After returning the chicken to this pan, sauce mixture is added and cooked until thickened. Scrambled eggs are finally added.
Half of the sesame seeds are tossed in. The drained noodles are divided between serving bowls, topped with the chicken and egg stir fry sauce and garnished with remaining sesame seeds.

Pine nuts may be added to provide an added crunch apart from a delicate flavour and subtle sweet aroma to the Chicken egg noodles. Roasted pine nuts, rich in monounsaturated fats like oleic acid, help lower the bad LDL cholesterol and elevate the good HDL cholesterol levels. Pine nuts are an excellent source of B vitamins, Vitamin E, and packed with essential minerals like potassium, calcium, magnesium, manganese, iron, zinc and selenium.
Chicken Egg Noodle Variants
Chicken Egg Noodle Casserole
Chopped onions, garlic and mushroom are sautéed in melted butter heated together with little olive oil in a pan. Flour is added and mixed well. Gradually chicken broth and milk are added with constant stirring to avoid lumps. Eggs are beaten with some of the broth mixture and added to the pan followed by some sherry. After mixing well, the contents of the pan are transferred to a greased casserole with the pre-cooked egg noodles as the base. Breadcrumbs and grated Parmesan cheese are sprinkled on top and butter is dotted on the surface, before baking till the top attains a crusty golden colour.
Creamed Chicken and Egg Noodles
Egg noodles are prepared following pack instructions, drained and set aside. Chicken is cubed and cooked by seasoning with salt, pepper and garlic salt and a dash of lemon juice. In a saucepan, sliced onions are sautéed until transparent. Flour is added and stirred along with gradual addition of milk. The mixture is heated and as it thickens, steamed veggies like green peas and finely chopped carrots, bell peppers, beans, corn are mixed in. The dish is allowed to simmer and finally the egg noodles are gently mixed in. Seasoning may be adjusted and fresh parsley used as garnish.
