Cheese carbonara is a pasta based dish, in which the hot pasta is combined with a creamy mixture of beaten eggs, cheese, salt and freshly ground black pepper, called carbonara. The cheese that features most commonly in this preparation is the Parmesan, which is freshly grated and combined with the carbonara sauce and is also sprinkled on the prepared dish, before serving. Pecorino, being similar to Parmesan and with strong flavors is the next most preferred variety of cheese for making the dish.
