Celeriac Soup

Celeriac soup is a flavorsome, light and creamy soup which is made up of celeriac, also known as celery root. The soup does not possess any tough texture and is enriched by celery flavor.

 

Celeriac Soup Recipe- Ingredients Used and Preparation Overview

The basic recipe for celeriac soup suggests the use of olive oil, diced onions, chopped celeriac, bay leaves, vegetable stock or chicken stock, thyme, fresh parsley, pepper, and salt as the essential ingredients.  

 

The preparation process of celeriac soup is very simple, in which onions are sautéed in olive oil, to which celeriac is added, followed by adding all the other ingredients, one by one, except parsley, and the mix is simmered for around half an hour. Thereafter, thyme and bay leaves are removed, parsley is added, and the entire mix is pureed before serving.

 

Celeriac Soup Recipe Variations

There are several recipe variations of celery root soup, a few of which are discussed below:

 

  • Creamy celeriac soup with crispy bacon – in this recipe variation, bacon is used as one of the essential ingredients. It is cut into thin strips and fried until crispy. The celery root soup is prepared, and garnished with these crispy bacon strips, before serving.

 

  • Roasted celery root soup- this celery root soup recipe suggests roasting the celeriac in oven for some time before using it to make the soup. Potatoes, chicken stock, parsley, and thyme are added to sautéed onions, celery, garlic, and leek, and the mix is cooked for some time before adding roasted celeriac. Thereafter, the mixture is pureed, seasoned with pepper and salt, to which water or milk is added for attaining thinner consistency.  

 

  • Tomato and celery root soup- garlic, carrots, and leek are sautéed in oil for some time, to which diced tomatoes, potatoes, celery root, pepper, salt and thyme are added, followed by adding chicken stock, and the entire mix is cooked for around twenty minutes, after which the mix is pureed, and pepper, salt and little amount of sugar are added. The celeriac soup is served after garnishing it with celery salt, thyme leaves, and cherry tomato confit.
