Cauliflower Sabji

 

Cauliflower sabji, commonly called as phool gobhi ki sabji is a popular North Indian dry curry preparation . It has a typical flavor of cauliflower and it has the flavor of Indian spices.

 

 

Ingredients and Preparation

 

Cauliflower is the main ingredient for making cauliflower sabji. Indian spices like cumins, turmeric, red chilli powder and coriander seed powder. Ginger and garlic is also used to flavor the curry. Other ingredients like onion and tomato can also be used.

Combination of vegetables can be used to make the curry. Green peas and potatoes are the most commonly used vegetables along with cauliflower.

Traditionally, the curry is made in an aluminium kadhai. Oil is taken in the kadhai and cumin is added. Cauliflower florets are added along with the spices. It is cooked till tender.

 

 

Serving

 

  • Cauliflower sabji is served with hot chapattis or rotis.

  • Aloo gobhi is one of the most popular dry curries in India. It is made with potatoes and cauliflower.
  • Gobhi matter is made with green peas and cauliflower.

  • It contains good amount of fiber, folate and potassium. Fiber helps to reduce the blood cholesterol and also strengthens the gastro intestinal tract. Folate is very essential for pregnant women as it prevents child birth defects. Potassium helps to maintain and regulate blood pressure and control the adverse effects of sodium.
  • It is also a good source of minerals like manganese, copper and iron.
  • Cauliflower is a rich source of vitamin K which is very essential for blood clotting and prothrombin development.
