Carrot Sabji

 

Carrot sabji is a popular north Indian curry made of carrots. It is generally made in the dry form. It is slightly sweet and is spiced with Indian spices. There are different variations made all over India. Each state has a different way of making it.

 

 

Ingredients and Preparation

 

Carrot is the main ingredient for making carrot sabji. Other ingredients like onion, tomato, ginger and garlic are used. Spices like turmeric, red chilli powder, coriander seed powder and cumin are used.

In south India, carrot poriyal is made with grated coconut.

Other vegetables like green peas, French beans and potatoes can also be used.

Carrot sabji is made by cooking onion, tomatoes, carrots and all the spices together till the carrot is cooked.

 

 

Serving

 

  • Carrot sabji is served with Indian breads like roti or chapatti. It even tastes good with pooris.

  • Gaajar matter is a popular North Indian curry made of carrots and gren peas. It is commonly made during the winters.
  • Beans gajjar is made with French beans and carrots.

  • Carrot sabji is very low in calories and fat. It is high in dietary fiber and is good for weight watchers.
  • Carrots are a very good source of beta carotene. Beta carotene is converted to vitamin A and is good for vision. It helps to protect the eyes from macular degeneration. Beta carotene acts as an antioxidant and prevents the body from free radical damage. It also delays ageing.
  • It is known to reduce cholesterol and the soluble fiber helps the body flush toxins fom the body.
  • Eating carrot reduces risks of cancer.
  • Carrot also helps to regulate blood sugar levels. It is known to have a hypoglycemic effect to a certain level.
