Breakfast Sausage (also referred as country sausage or pork sausage) is a fresh pork sausage served as breakfast. Breakfast sausage is prepared from pork butt, pork fat, kosher salt, ground black pepper, brown sugar, grated nutmeg, cayenne pepper, and red pepper flakes. The pork is diced, mixed with ingredients and chilled for an hour. Breakfast sausage is often served as patties, either by grilling or frying.
