Preparation of Bolognese Sauce
The ingredients commonly used in Bolognese sauce are beef, tomato paste, onions, pancetta, carrots and celery. These are cooked in meat broth, milk and white wine. Veal, pork sausage, chicken, are also included in the present versions of the recipe. The sofffrito is also prepared with mostly butter, though olive oil is also used. Porcini mushrooms, prosciutto, and mortadella are added these days to the Italian ragu.
