Blood sausage, also popular as blood pudding or black pudding, is a sausage made with dried blood (commonly known as cooking blood).
Preparation of Blood Sausage
Blood sausage, usually made of pork or cattle flesh, is filled with meat, sweet potato, onion, oatmeal, barley, suet, or fat while cooking. Black puddings are rarely made of other kinds of meat like horse meat, sheep or poultry meat. The blood is cooked till it attains a thick consistency and is allowed to coagulate on cooling, thus forming a pudding.
Serving Blood Sausages
Blood sausages are served as breakfast in different European countries and in Canada. They may be consumed raw also, but are preferably grilled or boiled in their skins. Blood sausages are also served with white and red puddings as an alternative to fish and chips.
