Black forest ham is a type of smoked ham from the Black Forest German cuisine. Also popular as Schwarzwälder Schinken amongst the Germans, this ham is one of the most flavorful meats of the region. Preparation of black forest ham is a prolonged process which can go up to a quarter of an year! The raw meat is first cured with a seasoned salt mixture consisting of juniper berries, pepper, coriander, garlic and other spices for a couple of weeks after which it is smoked sourced by sawdust and fir brush for some weeks. The smoking imparts a dark red hue to the meat. Black forest ham may be served as an accompaniment to fruit or bread or used as an ingredient for other recipes.
