Berbere is prepared with chile peppers, cloves, allspice, ginger, rue berries and ajwain. Sometimes, a few local herbs and spices are also used in the making of Berbere. This spicy blend has a coarse earthy texture and is yellow in color.
Berbere enhances the spiciness when it is used as a rub for cooking red or white meat. It is also used as a paste to flavor soups, stir-fries, casseroles or is also used as a curry base.
