Beet Curry


Beet curry is a dried, spicy preparation popular in the Indian subcontinent. The dish, also known as Chukandar Ki Sabzi in Northern India, is both colorful and nutritious making it something of a delicacy in the region. The South Indian Brahmin community has its own special recipes for preparing the curry which is highly popular in the island country of Sri Lanka as well. The beetroot is cooked in the form of a curry in the Far Eastern countries of Malaysia and Thailand too. The Pakistanis cook it with meat usually.


Curried beetroot salads and soups are variations of the dish which are regularly served in Indian restaurants across UK and USA. The dish is usually served with plain or lemon rice in the South of India whereas it is preferred to be consumed with chapattis, the Indian flatbread, in the Northern regions of the country.  While the beetroot is usually cooked as a single vegetable curry, a number of combinations with peas, carrots, as well as potatoes are found in different regions of India.



Overview of Beet Curry Recipes

The traditional South Indian form of beet curry involves adding cumin and mustards seeds along with a few curry leaves to hot oil. Diced beetroots are added to the oil which is cooked with an assortment of spices namely asafetida, turmeric, and red chili powder which is seasoned with salt. Freshly grated coconut serves as the garnish and the dish is considered to be an ideal accompaniment for steamed rice and tomato rasam.


The North Indian version includes fried onions and coriander powder instead of asafetida and curry leaves.

Some of the most popular variations of the beetroot curry include:-

  • Beet Sambal- This is a Malaysian dish where the strips of beetroot are cooked with spices along with the leaves and stalks of the beetroot plant.
  • Beetroot Massaman- This is a Thai dish of beetroot cubes cooked with the traditional Massaman paste prepared with kaffir lime leaves, shrimp paste and other spices.
  • Chukandar Gosht- A traditional dish of Northern India and Pakistan cooked with mutton and circular pieces of beet in a spicy, hot gravy flavored with garam masala powder.
  • Curried Golden Beet Soup- This is a popular soup served in western restaurants made with roasted beets, carrots, and parsnips mixed with curry powder. It is served with a dollop of yogurt or sour cream on top.
