Sante Fe Style Beef Enchilada
Ingredients – Boneless beef, tomatoes, onions, garlic, salt, ground coriander and cumin, green chili slices or dices, cream, corn tortillas, Jack and Cheddar cheeses, sour cream, black olive slices and scallions.
Preparation – All the ingredients except the tortillas, olives, scallions and sour cream are cooked together and the beef is then shredded. The tortillas are warmed in a mixture of heated cream and chilies. The beef mixture is spooned onto each tortilla and a grated cheese topping is added with more cream. The tortillas are not rolled in this preparation but are directly sent to bake. The remaining ingredients are used for garnishing.
Quick Beef Enchilada
Ingredients – Ground beef, onion, cheddar cheese, black olives, canned sauce or dry enchilada sauce mix and flour tortillas.
Preparation – The tortillas are warmed and rolled with a mixture of cooked onion and ground beef and grated cheddar cheese. The enchilada sauce is poured over the rolls and cheese and olives are sprinkled on top of them. The dish is then baked until the cheese is completely melted. The use of canned or dry sauce mix saves the time for making enchilada sauce, which quickens the main preparation of the dish.
Homestyle Beef Enchilada
Ingredients – ground beef, onion, garlic, canned enchilada sauce, salt and pepper, corn tortilla, Cheddar or Monterey Jack cheese, sour cream and fresh cilantro.
Preparation – The ground beef is cooked sautéed with garlic, onion, salt and pepper and simmered in the enchilada sauce. The tortillas are warmed and dipped into the enchilada sauce and rolled up with the beef mixture inside. The dish is covered inside a baking pan and baked for a few minutes, sprinkled with cheese and baked uncovered until bubbly.
Bean and Beef Enchilada Casserole
Ingredients – Ground beef, onion, chili powder, ground cumin, pinto beans, green chili peppers, dairy sour cream, all purpose flour, garlic powder, corn tortillas, enchilada sauce and cheddar cheese.
Preparation – The beef, beans and spices are cooked into mixture while the flour, sour cream and powdered garlic are separately combined into a sauce. The tortillas are layered on a greased baking dish, covered with the meat mixture, sour cream mixture and the enchilada sauce and more such layers are repeated and finished off with the enchilada sauce and cheddar topping. The dish is then baked.

Beef enchilada is a main course dish and is most commonly served for dinner along with accompaniments like beans, salad and rice. Sour cream is another popular accompaniment to this preparation. Zinfandel is an ideal drink to be served with this dish. For garnishing the dish, fresh cilantro, fresh crème, salsa, olive and vinegar make for good choices. Often, the dish can be spotted being topped with one whole poached egg.
