Bacon Sausage

 

Bacon sausage represents two different types of preparations: a sausage that is made by blending all types of ground meat (such as pork, bacon & beef) with seasonings and spices and pressing this meat mixture into patties or link sausages, and represents a variety of dishes that are prepared with bacon and sausage as two separate ingredients. Bacon sausages are usually smoked and then poached, which help in enhancing their taste and flavor. Thee preparations made using bacon and sausages as separate ingredients include stews, casseroles and rice dishes, stir fried foods, etc. These dishes are quite popular in the American and some European cuisines, especially Polish.

 

Ingredients

Bacon Sausage is made with bacon, ground pork and ground beef as the key meat ingredients. Other ingredients include paprika, garlic, coriander, ginger, pepper, sugar, Cure#1, salt, water and synthetic casing (made of cellulose, collagen, and plastic or extruded material).

 

Method of Preparation

Bacon Sausage is prepared by grinding pork and beef. All the spices and seasonings are mixed in a little water and added to the ground meat, along with diced bacon. They are mixed well till the mixture is sticky enough to hold together. This meat mixture is stuffed into synthetic casing and both ends are tied. The sausage is smoked and then poached. Once cooked, the sausages are dipped in cold water to cool and stored in the refrigerator. This sausage can now be used for any kind of preparation.

Bacon & Sausage Stew with Beans –

Ingredients: Dried black turtle beans, cannellini beans, smoked bacon, smoked sausages, cabbage, chopped garlic, chopped tomatoes, chicken stock, olive oil, fresh thyme, fresh parsley, and black pepper.

Preparation: Beans are soaked overnight, washed and simmered till they are done. Meanwhile, bacon is fried golden brown. Garlic is sautéed along with the browned bacon; tomatoes and chicken stock are added. The contents are simmered for a while and the cooked beans are added along with chopped cabbage, sliced sausages and cooked till done. Herbs and seasonings are added. This dish is served hot.

 

Sticky Apple, Sausage & Bacon –

Ingredients: Smoked streaky bacon, pork sausages, red apples (cut into wedges) and sunflower oil.

Preparation: This is a simple dish that is prepared by wrapping the bacon strips around the sausages and roasting them till they brown. Apple wedges (with the skin) are tossed and roasted for some time till the sausages is cooked and the apples caramelize and turn sticky. This dish tastes best when served with mash.  

Pork and herb sausages too can be used for making this variation of Bacon Sausage recipe.
