Baba ghanouj is a dish of baked, roasted or broiled eggplant, mashed and seasoned with spices and garnished with fresh herbs. Baba ghanouj belongs to the Levantine cuisine and has a smoky flavor that comes from roasting the eggplant over an open flame. The eggplant is then peeled and seasoned with a blend of spices that include garlic, lemon juice, salt, olive oil, mint, ground cumin and parsley. The dish is served with flatbreads or pita bread as an appetizer or as a side in a meal. It is customary to sprinkle the dish with olive oil before serving. Pomegranate concentrate is also added to the dressing at times. Tomatoes diced onions and other vegetables are frequently mashed in along with the eggplant.
