Apricot Curry


Apricot curry is a spicy, gravy-based dish cooked with apricots as the primary ingredient. The curry is usually prepared with a number of additional ingredients which may include a variety of vegetables, poultry, or pork. The dish is more popular in the Western World and is considered to be more of a fusion dish instead of an authentic curry.


The curry is cooked by adding curry powder or Thai curry pastes to stoned and diced apricots along with chicken breasts and coconut milk. Ginger flakes, chicken stock, and butternut squash are occasionally added to enhance the taste. Pork chops are cooked with apricots and Dijon mustard in Great Britain and they are also popular in the United States of America. Broiled or grilled shrimps and other seafood are occasionally served with an apricot glazed sauce over them.



Overview of Apricot Curry Recipes

The simplest method of cooking apricot curry involves combining wine vinegar, pepper sauce, curry powder, cinnamon, Worcestershire sauce, coconut milk, salt, sugar, and apricots in a blender and cooking the sauce over medium heat. Chicken meat is added to the simmering dish and it is removed from heat when the chicken turns tender and the sauce thickens considerably. It is usually served over basmati or jasmine rice.

Most of the curry recipes have been created by experimentation, as there are no authentic or traditional recipes for curried apricots. The most popular ones among them include:-

  • Curried Apricot Bake- This is a casserole dish prepared by baking apricot halves filled with a mixture of butter, curry powder, and sugar.
  • Curried Apricot and Rice Salad- A cold dish of cooked brown rice and apricots mixed with mayonnaise, curry powder, celery, hard-boiled eggs and grapes served on a bed of lettuce leaf.
  • Jardaloo Ma Gosht- This is an old Persian dish consumed by the Parsis residing in India. It is prepared with lamb meat and water-soaked apricots cooked together in a spicy gravy.
