Amazon Pepper

 

Amazon pepper is the name given to a variety of specially created, cross-pollinated chilies. The chili products are created and marketed by Comexa, a family-owned enterprise. The pepper that resulted from an accidental cross-pollination between the cayenne peppers and a South American local variety called pipon was named "Amazona" in honor of the Amazon River basin which is believed to be the birthplace of all peppers.

 

The peppers are highly aromatic and are used in both the green as well as the red forms to prepare sauces. Giorgio Araujo first created the pepper in 1970 accidentally and started manufacturing an entire range of sauces using them. The factory is located in Columbia and has become hugely successful on account of the unique Amazon pepper sauces which went on to win prizes at food festivals and fairs held across the globe.

 

The production of the Amazon range of hot sauces started in 1994 with the United States serving as its largest market followed by Central America and Japan.

 

 

What Is Amazon Pepper?

The pepper is an accidental breed created due to cross pollination between the fiery hot cayenne pepper and the local pepper known as pipon which is big in size with a vibrant color. The hybrid chili pepper was intensely hot and had a bright color with a fresh aroma as well. The pepper has been used in almost all sauces by the Comexa group since 1994 and is currently one of the most popular chili products marketed in USA.

 

 

Amazon Pepper Sauces

  • Red Sauce- Contains the mature red colored pepper mixed with vinegar and salt.
     
  • Green Sauce- Is made with fresh green Amazon variety of peppers along with vinegar, salt, turmeric, and xanthan gum.
     
  • The peppers are also preserved in vinegar and sold in a bottled form as Red and Green peppers in Vinegar.

 

 

Amazon Pepper Culinary Uses

  • The whole and sliced peppers preserved in vinegar can be used to flavor rice dishes and used in stir fry vegetables. They are also frequently mixed with salads and utilized as a topping for hamburgers and hot dogs.
     
  • The red sauce is considered to be ideal for marinades and as an accompaniment to seafood. It can be used as one of the basic ingredients of  fiery cocktail drinks as well.
     
  • The green sauce is used to flavor ceviches and pasta dishes along with a variety of seafood which includes oyster, shrimps, and mussels.

Amazon pepper sauces won the “Scovie Award” at the “Chile Pepper Magazine Hot Sauce contest”, 1999.
