Alpine Chicken is a chicken dish slow cooked with layers of Canadian bacon, carrots, celery and onion. Flour, parsley and poultry seasoning may be added to the Alpine Chicken. Alpine Chicken is cooked for a couple of hours which not only tenderizes the chicken but also allows the juices from both the chicken and vegetables to combine. Alpine Chicken may be topped with sliced pimiento and Parmesan cheese and is served with a bow full of hot noodles.
