Almond Milk

Almond milk is a healthy and nutritious liquid made using ground almonds and water. It does not contain animal milk and is therefore, consumed by vegans who restrict themselves from consuming animal milk. Sweetened and unsweetened versions of almond milk are available in different flavors, such as vanilla and chocolate, the sweetened and vanilla flavored varieties being popular. Being rich in vitamins and not containing lactose or cholesterol, almond milk is considered to be a healthy and nutritious drink. It is even used as a substitute for dairy milk, which is known to contain lactose and cholesterol.

Almond milk is consumed as a drink and is also used as an ingredient in several dishes. This extract, being free of almond solids, is low in fat, cholesterol, vitamins D and E, and calcium. It is lower in calories in comparison to cow milk. The commercially produced almond milk is fortified with the missing vitamins and minerals, which are seen to be lacking in the homemade versions.

 

History of Almond Milk

The history of almond milk dates back to the Middle ages, when it was used by both Islamic and Christian people. The nut, due to its plant origin was considered to be a suitable drink during Lent(the period between Ash Wednesday and Easter, observed by Christians). The people of the medieval periods preferred to use almond milk to cow's milk as the latter has a very short shelf life. Cow's milk is known to ferment within a day or two, while almond milk remains unspoilt for a longer period of time. Known as amygdalate in the medieval times, Almond milk was a popular staple of the inhabitants of the regions from the Iberian Peninsula to East Asia.

The beverage is mentioned in a 14th century recipe book, The Viandier, where it is said that the milk is a good substitute of animal milk during the fasting days.

 

Preparation Overview of Almond Milk

To make the almond milk, the basic ingredients which are needed are almonds and water. The almonds are first soaked overnight and once soft, they are peeled. The almonds are then put into water and blended to achieve a consistency similar to milk. Once done, the milk is strained to remove any granules or other particles. Dates are sometimes added,while blending, for a sweet flavor.

 

Culinary Use of Almond Milk

Almond milk can be used in several ways for cooking. Here are some of its culinary uses:

·         The milk tastes well when tossed on cereals.

·         This almond based milk can be used for making smoothies and milkshakes.

·         Yogurt can be made using this milk.

·         The milk is a good substitute of ordinary milk in baking.

·         A variety of sauces can be made using this almond derived milk.

 

Buying and Storing Almond Based Milk

Almond milk is easily available in supermarkets in different flavors. While buying, the manufacturing and expiry date of the milk should be thoroughly checked. If there is a smell or discoloration, the milk should be considered stale. Powdered form of the milk is also available.

The milk should be stored in a tightly sealed container in the refrigerator when not in use. Before using it for consumption, the bottle or jar should be shaken well. The shelf life of almond milk is 5-7 days.

The almond based milk is highly beneficial for health and is used in many recipes.

The milk is however rich in calories and has no fiber.
