Almond Biscuit


Almond biscuit is a type of biscuit pastry of Chinese descent. This biscuit is also known as almond cookie or almond cake and it is one of the most standard desserts sold across Hong Kong and in some of the selected Chinese bakeries operating outside the mainland. Most of the almond cakes that are sold overseas are imported from the island of Macau. These cookies are typically small and have got no filling.


This snack has become one of the most popular food exports of Macau, where about 15-20 stores near the ruins of the Cathedral of St. Paul, specialize in different flavors of almond cakes. Hawkers mostly bring business by luring the visitors to their respective shops. It is also promoted on the Macau tourism site as one of the most famous Macanese delicacies of all times the most popular brand being Koi Koi 

One or the other variant of this famous Chinese almond biscuit is found in most of the European nations like Greece, Italy and Germany.


Chinese Almond Biscuit Recipe: Ingredients and Method of Preparation
The almond cookies in China are prepared using sugar, salt, all-purpose flour, margarine, baking powder, water, egg, blanched almonds, almond extract, and egg yolks.  The ingredients are combined in a gradual manner and then baked in an oven until they turn crispy or golden brown.


Almond Biscuit Recipe Variants

  • Italian Almond Cookies: These cookies are made by combining ingredients like all-purpose flour, eggs, vanilla extract, butter, lemon zest, almonds, and confectioners’ sugar.  These crispy almond cookies are normally served during the Christmas dinner along with a glass of dessert wine.


  • Greek Almond Cookies: These cookies are fondly called amigthalota and best served with a cuppa. They are prepared using ingredients like almond meal, almond essence, castor sugar, flaked almonds and lightly beaten egg. All the ingredients are combined in a bowl and shaped to form crescents and baked until crispy. At times, sifted icing sugar is sprinkled over the biscuits for an added flavor. The biscuits are best to be served as a gluten free diet.


Biscotti Rococo: These are the spicy almond biscuit variants from Italy.  These cookies are generally associated with Christmas festivities in Italy. They have simple, crunchy and quick texture. They are most popularly served in all homes of Campania region during the Christmas dinner. The biscuit is prepared using ingredients like all –plain flour, ground almonds, sugar, baking powder, lemon zest, unsalted butter, sweet white wine, orange zest, eggs, candied peels, whole almonds, nutmeg, icing sugar and cinnamon. The egg glaze is prepared by combining the large beaten egg with salt. All the ingredients are combined to form dough and ultimately shaped like doughnut and baked in baking trays until they turn golden color. This almond biscuit is dusted with icing sugar.
