Achaar

Achaar is the Indian term for pickles that is made using a variety of fresh vegetables, fruits and even meat and seafood. The ingredients are either used fresh or dried or fried, which is later mixed with a spicy and tangy mixture of spices, herbs and seasonings. Achaar thus made can be bottled and stored for a minimum period of 6 months, if refrigerated. Achaars that use dried ingredients have even longer shelf-life. Some of the most popular of Indian achaars are those made using fruits like mango, lime etc. Depending of the main ingredient that is pickled there are varieties of achaars like mango achaar, lime achaar etc.
