Mat Lucania has had many set backs on his journey becoming a cook & has come a long way. Mat's first venture was running a Cafe/Bistro in Bury St Edmunds, Suffolk before assisting with a venture to run an Italian Restaurant in Kingsbridge, Devon. He went on to write recipes for Devon & Cornwall Newspapers & became a local critic in the Devon Area. Mat appeared in ITV's Britain's Best Dish in 2007 http://www.youtube.com/watch?v=sGxctvQXQI0 & then had a spell at Gordon Ramsay’s Boxwood cafe in Knightsbridge, London. After all that He moved from Suffolk to become Head Chef at Core Organic in Paddington & won over many fans with his fresh & funky menu. Mat then went onto become the Head Chef at The Hillgate in Notting Hill building a great reputation for the best roast dinner in London. A chance meeting with Marco Pierre White took Mat briefly to Lanes Restaurant in Liverpool Street, London "Now Marco's Steak House", but unfortunately never found what he was looking for. Mat has cooked for countless celebrities on his travels & now finds himself a home & cooking on his own terms at The Rosebud in Brightlingsea, Essex. Mat has always dreamed of running his own restaurant & that dream has now been realised at the Rosebud Pub in Brightlingsea. Mat said “I love the fact that I can bring English tradition in line with quality traditional food at the Rosebud, without losing sight that this will be a pub & not a restaurant, bring back real pubs". Mat has a reputation of using local sustainable food in all his ventures so the new challenge of the Rosebud is something that excites this humble but passionate chef.
