Philippine Cuisine Welcome and "Mabuhay"! You've just reached Philippine Cuisine of iFood.tv's group section. Featured are some Filipino recipes that have become all time Philippine favorites! Philippine cuisine is as diverse as the different cultural groups that make up the Filipino people. It is flavored by a rich variety of herbs and spices found all over the the archipelago that comprises 7,107 islands. Filipinos have embraced as their own many foreign foods like the noodles from the Chinese, rice-meat dishes from the Spaniards, fast-food from the Americans and even spaghetti from the Italians. All these now form part of the Philippine cuisine - A fusion of recipes from former traders, immigrants and colonizers. with the Filipino touch, of course. In Fiestas or festive occasions (such as the mascara festival as depicted on the carrier picture), Filipino men and women bond together and tirelessly prepare more sophisticated dishes. Tables are often laden with expensive and labor-intensive treats requiring hours of preparation. Some of the dishes that you would commonly see on the dinner table are: Paella, a spanish dish of rice cooked with meats and/or seafood and vegetables Adobo, an original tasty and full of flavor Filipino dish that is made with chicken or pork or the combination of both. Sapin-sapin, a very colorful Filipino rice-based delicacy, sprinkled with crumbs. Lechón, a whole roasted suckling pig, takes centerstage. Other sophisticated dishes prepared include hamonado (honey-cured beef, pork or chicken), relleno (stuffed chicken or milkfish), mechado (beef cooked with pork lardoons), afritada, kaldereta, pochero, arroz valenciana, morcon, and pancit canton. The table may also be decorated with various sweets and pastries such as leche flan, ube, sorbetes (ice cream), and gulaman (jello). Christmas Eve, known as Noche Buena, is the most important feast. During this evening, the star of the table is the Christmas ham and Edam cheese (Queso de Bola).
