http://www.defusao.com To share a little about me and of what I know, I made myself as a guest of an interview done by a friend .I hope you like.Cláudia: Tell me on a few words who you are.Gabriel: I am Gabriel Filippi, I am 28 years old, I was born in Porto Alegre, Brazil, I live in Portugal for 18 years now, study computer engineer at university and like cooking.C:what's your more outstanding characteristic?G:My willpower, that I felt mostly after I was 17 yeras old. For diverse reasons, I had to change my relationship with life and with the world. C:In what way that helped you develop yourself as a person? G:After many falls and errors, a person manage to get his head up and to face the world. C:And cooking was ity a new way to cope ?G:yes cooking and my computer studies. C:what was that motivated you for cooking?G:My father always had taste for the kitchen and he had a pizzeria at home, a home delivery service. My mother, vegetarian, cooked plates different from the other ones I usually saw back then, that was something that opened up the horizonsfor me. Then, with their separation, my mother goes outside and of course my father doesn't start to cook everyday. I am the one having to find my way alone in the kitchen. C:and how you start, from where? G:Actually fI started making hamburgers, at the age of 12 or 13 years old, and the friends that I invite to eat are overwellmed with the ingredients and sauces I use, back then there was not the fast-food offer as there is today here in Portugal of course. C:how did you continued your cooking taste? G:Continued to cook everyday, until that, about the age of 15, I started highschool doing Arts,something that got to enrich myself on concepts, art history, forms, color, poetry, music, ballet, painting... All of this influenced my way to make and to present the dishes I make. C:When you got aware of that cooking vein, did you try to learn? How, where?G:No,I just learned practicing.C:Not even from books? G:I bought some, but few recipes I usedf from them. I like to be myself to create it. I like to cook with what have, especially because I don't have patience to go on shopping ingredients. C:Does things go wrong a lot?G:No,even though I learn on a trial and error base I don't mistake myself too much , and I get things done right often adn often.C:Do you like cooking more for yourself or for the others?G:Never just for me, but now, with my website (http://www.defusao.com) I cook more just to share the dishes on the net and I sometimes end up eating alone. C:Can you be your own critic?G:Yes,I think so but I do not accept well criticism atittude when I believe they are not quite consistent and constructive. C:I see ypur creations require a lot of imagination. Where does it comes from?G:I began to appear by dinning out on restaurants, with dishes similar to what do today, carefull presentation and with different types of ingredients.I also began to be more and more interested for the presentation of the foods on the plate, and for the plates itself, different, with unusual shapes,and thinking of each dish as a unique creation.I even feel difficulty making twice the same dish. C:What we can find on your cook?G:Um little bit of everything, but more ingredients from Italy, Brazil, also Portuguese and of other origins... A little bit of what you can find in the local supermarkets and some gourmet stores. I like to do unusual combinations, as, for instance, pasta with fruit sauce (strawberry, kiwi) and I dedicate a great part of the cooking creation time about the plate presentation. I work a little on phases and at this time I am on the thematic menu one (the whole menu around of one ingredient). I had the avocado phase ,the risotto,the mascarpone,the strawberry, etc. C:What do your guests like the most?G:Desserts and of the presentation.C:I know that you have a project. Defusao gourmet-fusion. Do you want to explain the one what is?G:De Fusao. Art at the table, is a dream, at this time it's not possible due to financial issues. The dream is to open a Fusion Cuisine restaurant. C:Anything more that you would like to share? G:I read somewhere that to dream about cooking it means that he/she wants to be loved. The food is a basic need of the human being, just as love. C:And you dream a lot?G:Yes,I dream awake.
