I made the recipe and it came out well, except it didn't rise as much as I had hoped. I'm wondering if the very long times indicated for proofing were accurate - I think my dough was ready long before the indicated times of 250 minutes and 120 minutes.

I tried this recipe three times. The taste was excellent consistently. A difficulty is just after browning the chicken. The things tend to stick. Also if the oil needs to be changed or the same oil( which is diluted due to chicken addition) can be reused. Any case, it is a good recipe and worth trying. Here the curry powder is chicken curry powder.

I like this recipe. It's so simple. I usually make this with bread on the bottom but this way it cuts calories. Only thing I would change is baking them directly in the muffin pan. I would use some decorative cupcake liners. It would make for easier retrieval, easier clean up and the decorative cups will be festive for whatever occasion you decide to make these Egg Cups. Like for an Easter Brunch you can use cupcake cups with an Easter theme.

Nightshades? you ask? Ah, there's the rub. (POTATOES—TOMATOES—SWEET & HOT PEPPERS—EGGPLANT—AND—SPICES derived from these foods: Allspice; Mrs. Dash; Paprika; Turmeric; Cyanine; Tabasco; as well as a number of other foods including, but not limited to: Aecia; Goji Berry or Wolfberry; Morning Glory; Ground Cherries; Gooseberries; Tomatillo; Tamarillos; Garden Huckleberry; Naranjillas; Pepinos; Chili Peppers; Cape Gooseberries; Pimento. V8 Juice…..) There are those who are so sensitive to the nightshades as to find that even a small amount of paprika in a dollop of mayonnaise is enough to cause pain and aggravation for up to three days! When a label lists “spices” beware, it usually means paprika is in the mix. The red skinned potato can be used safely by those sensitive to the nightshades as they are not in the same family. Enjoy.
