I never tried making aloo paratha this way. I don't think it will come out nicely as the mashed potatoes tend to be sticky. The other variations to the mooli paratha are fenugreek leaves/methi paratha, spinach/palak paratha, paneer paratha or grated cauliflower or cabbage/ gobi paratha. You may add some finely chopped onions and chopped cilantro also.
