I did this a little differently (not having seen this version). I did it with boneless chicken breasts (2). First, a marinade. I combined:
1 cup low fat sour cream
3 minced garlic cloves
1.5 Yb fresh lemon juice
1 Tb Spanish paprika
1 tsp crushed dried rosemary
1tsp black pepper
3/4 tsp sea salt
Cover the chicken breasts thoroughly with marinade. Refrigerate overnight.
When ready to cook, roll chicken breasts in panko (or bread crumbs) that have been mixed with Parmesan cheese. How much depends upon your taste.
Bake in an olive oil coated bake pan until safely but not too done (depends upon how the breasts have been cut).
