ok... the ripeness of this fruit is bewildering. i use unripe (white meat) papaya for thai salads. i use the ripe/sweet meat for salsa and chutney... Now you tell me to find one that is in between??!!! How do i know this at the store for pete's sake? And does "raw papaya" in most recipes refer to the white unripened fruit usually??
