Gai Yang is very popular in Thailand and each region has their own way of making this grilled chicken. I think this is the Isan/Laos style. It is such fun to see the food hawkers board a stopped trsin or bus carrying these chickens on split bamboo sticks yelling gai yang-gai yand-GAI YANG often they sell little bags of sticky rice to eat with the chicken. They slit the 16" or so long bamboo on one half and leave the other end solid. This allows them to open up the bamboo and sort of tweezer hold the chicken for grilling. "Chicken on a stick" We make a version using yellow curry paste and coconut milk, as well as this Isan style chicken.
