Supposedly they use bottled NYC water. Yes smoked Nova Scotia Salmon is great on a Bagel or the Thai style Lox Steve and I make with lemongrass, kaffir lime, cilantro, coriander, gin and tequilla. I have phtos of it step by step must get them posted. It is best when aged and weighted for 8+ weeks.
I only use wild salmon or even steelhead.
