They are just live small shrimp. Sometimes they place them in cognac and let them "marinate" themselves then set the bowl on fire. Tastes great.
For a minute I thought it was bugs or gerubs like the stirfry in Thailand. Hey anything deepfried served with chile tastes good. Grubs are crunchy, so are the grasshoppers, but I won't eat the juicy sticky water bugs.
