Interesting article, MA. Good job. I love making thai food but it is difficult to find some of the main ingredients - such as Kaffir Lime Leaves and Galangal. I can find lemongrass very easily. Same with fish sauce. I have to make substitutions for the things I can't find so my dishes don't taste as authentic. I am only serving them to Steve (Trev wouldn't touch it) so it doesn't matter if it tastes authentic or not. He is happy with it no matter what.
