Hi Charles! Glad to know that you like Indian Cuisine and that you want to know more about it. Well, because of the sheer diversity in terms of religions, cultural practices, regions etc. etc., our country has a wide variety to offer. Add to that, the whole new influence of the west and other cultures from around the world, there's actually a whole lot available here. For beginners, you obviously know that we're famous for our 'hot' curries! Compared to the west, there's a very liberal use of hundreds of different spices in everyday cooking. There are a lot of Indians on this site and they've uploaded a variety of recipes and videos. You'll find them very informative. I too have done a little bit...especially with Indian Street Food.
