Vegan Chocolate Cake

You will need: 1 ½ cups of flour, 1 ⅓ cup cocoa powder, 1tsp baking soda, ½ tsp salt, 1 cup sugar, ½ cup vegetable oil, 1cup cold water or ice coffee, 2 tsp vanilla extract, and 2 tsp vinegar.

Preheat oven to 375 degrees. This is a cake that requires only one bowl in addition to the baking dish itself. Mix the dry ingredients in the baking dish and the wet ones in a separate bowl. Leave out the vinegar for now. Pour the wet ingredients into the dry ones and mix well until combined. Make sure the oven has come to the desired temperature. Working quickly, toss in the vinegar and stir briskly yet thoroughly. The batter will rise visibly. Put it in the oven and bake for 25-30 mins until a toothpick inserted in the middle comes out clean.

Another variant of making vegan chocolate cake that tastes considerably different is made by substituting water or coffee with vanilla flavored soy milk. If doing so try and use a natural fruit vinegar such as apple cider vinegar or raspberry vinegar. This changes the flavor of the cake as well.

Applesauce Spice Cake

Dry ingredients: cinnamon, cloves, baking powder, baking soda, 1 ¾ cups flour

Wet ingredients: ½ cup molasses, 1 cup applesauce

Sift the dry ingredients together. Mix molasses and applesauce in a bowl and stir in the dry ingredients. Pour batter into a prepared baking dish and bake at 350 degrees for 30-45mins or until it tests done.

Vegan Carrot Cake

Ingredients: 2 cups whole wheat flour, baking powder, baking soda, salt, 1 ½ cups water, 1 cup of chopped dates and raisins, any two of cinnamon, ginger, clove and nutmeg, ½ cup grated carrots, 1/3 cup of frozen orange juice concentrate.

Mix dry ingredients and set aside. Stew the spices, dates and raisins in boiling water for 5 mins until it reduces a little. Pour this over the grated carrots and let it cool completely. Add orange juice concentrate and mix well. Then combine the dry ingredients and bake in a lightly greased pan for about 45 mins at 375 degrees.

Vegan Banana Loaf

Ingredients: 1 ½ cups whole spelt flour, ½ cup oat flour, 3tbsp corn starch, 1 ½ tsp baking soda, spices of your choice (choose two or three among cinnamon, nutmeg, allspice, cloves),  4 ripe bananas, ½ cups pitted apricots or plums.

Mix dry ingredients and keep aside. Mash bananas and beat in blender along with the pitted plums or apricots and ¼ cup water until smooth. Combine with dry ingredients. Adjust dryness with water or soy milk. Pour into prepared baking dish and bake at 350 degrees for 25 mins.
